In a sauté pan or cast-iron casserole dish, heat the olive oil. Brown the veal pieces on all sides. Remove them and set aside.

In the same pot, sauté the chopped onion. Add the sliced carrots and sliced fennel. Sprinkle with the ginger, cinnamon, and turmeric. Let the spices toast for 1 minute.

Return the meat to the pot. Pour in enough vegetable stock to cover. Cover and simmer over low heat for about 45 minutes.

Add the zucchini (cut into cubes) and the halved dried apricots. Continue cooking for 25 minutes. The zucchini should be tender but not mushy.
