This cucumber and skyr salad is a refreshing and light starter, perfect for hot days. The combination of crisp cucumbers and creamy skyr, enhanced with aromatic spices, provides instant freshness.

  1. Wash and peel the cucumbers if they are not organic, then slice them thinly or dice them as you prefer. Place them in a colander, sprinkle them lightly with salt, and let them sit for 10 minutes. This will allow excess water to drain.

  2. In a bowl, whisk the skyr until smooth. Add the toasted cumin seeds, mint leaves, coriander, and salt. Mix well.

  3. Gently pat the cucumbers dry with paper towels. Add them to the skyr mixture and stir gently until the cucumbers are well coated in the spiced yogurt.

  4. Pour the lime juice over the salad and toss one last time. Taste and adjust the seasoning if necessary.

  5. Serve immediately or refrigerate for 15-20 minutes for an even more refreshing salad. Garnish with a few extra mint leaves.

  6. This salad is a perfect accompaniment to curries.

Note

For even more benefits for your figure, do not peel the cucumber completely (if organic) in order to retain maximum fiber!
